Red Lentil&Couscous - Monthly Mingle - Appetizers & Hors D'oeuvres

The theme of this month's Monthly Mingle is vegeterian Appetizers & Hors D'oeuvres and it is hosted by Mansi from Fun and Food.
I wanted to prepare something with red lentil.
This appetizer is actually a spontaneous idea of mine. It is savoury and hot. I serve some yoghurt or kefir among with it.


Ingredients:
125 g red lentil
125 g couscous
vegetable broth
1 tablespoon oil
1 shallot

2 garlic cloves
1 teaspoon tomato puree
chilli
1 piece of ginger

1/4 teaspoon coriander
juice and zest of 1 lemon
salt, pepper
green onion


Cook lentil in vegetable broth for about 30 minutes. Stir in couscous and set aside for 10 minutes. Heat oil, add chopped shallot, garlic, grated ginger, coriander and tomato puree. Fry for 2 minutes, add lemon juice, salt and pepper. Mix it to the lentil-couscous together with the lemon zest. Slice green onion and stir in. Form it as you like.
